Yakitori Shinohara is one of the only restaurants in Tokyo where you can experience world-renowned "Kobe Takasaka Chicken”
Yakitori Shinohara is a luxury yakitori restaurant. The dining experience can best be thought of as chicken kaiseki cuisine. As such, it is very different from the more casual yakitori ambiance that most people experience. It is notably one of the only restaurants in Tokyo that offers Kobe Takasaka chicken. This rare type of chicken is raised by Hideki Takasaka, a renowned poultry-raising genius in Japan. Arinori Shinohara, the owner of Yakitori Shinohara, was very impressed when he first tasted liver from a Takasaka chicken. So much so that he immediately decided to open a restaurant specializing in chicken kaiseki cuisine. He envisioned a restaurant where other people could come and discover Takasaka chicken, just as he did. The dinner course at Yakitori Shinohara starts with a special "Takasaka Chicken" appetizer that is followed by yakitori dishes. The yakitori plates are punctuated by smaller creative dishes, such as their famous bouquet herb salad and aged Hokkaido cheese skewers. Shinohara san says, "I want to keep challenging myself, and keep developing my skills." Shinohara san shared that he explores everything that inspires him, from food to fashion and even interior design. He decorated Yakitori Shinohara’s interior, exterior, furnishings, and tableware to suit his personal tastes. This personal touch gives Yakitori Shinohara a particularly intimate ambiance.

A key feature of Takasaka chicken is its extremely low fat melting temperature. This is what allows it to melt sweetly in the mouth. Many guests at Yakitori Shinohara are enamored by the fresh tsukune dish, garnished with egg yolk, marinated in soy sauce and wrapped in nori. However, in addition to chicken, Yakitori Shinohara serves an abundance of seasonal vegetables, all beautifully woven into the course. This ensures that diners enjoy a variety of flavors and textures throughout their meal. Shinohara san’s philosophy is that "I want all of our guests to leave with the feeling of satisfaction of having a stomach full of delicious food”.
“We wanted a special beer to match the special taste of Takasaka chicken”
Yakitori and beer are commonly enjoyed together in Japan. "I wanted to serve ROCOCO as soon as I opened my own restaurant. I wanted a special beer to pair with the special taste of Takasaka chicken” said Mr. Shinohara. The delicate flavor of ROCOCO gently pairs with the flavors of Takasaka chicken that Mr. Shinohara is able to extract by carefully grilling its most delicious parts.
